While authentic Mexican guacamole is comprised of only a few simple ingredients, chefs and TikTok stars have gone wild crafting over-the-top guac specialties. In parts of Mexico, you can even find this avocado-rich treat piled high with crispy crickets, ants and chapulines (or grasshoppers). If that’s a little too experimental for your taste, have no fear—we’ve rounded up 17 of our best guacamole recipes ranging from basic to brilliant (no bugs involved).
What is guacamole?
Guacamole is a Mexican dip or spread made up of mashed avocados, lime juice, cilantro, onion and salt. It’s usually served with tortilla chips, or used as a topping for nachos, quesadillas, enchiladas, burritos, salad bowls and more.
How to make guacamole
While guacamole recipes are as varied as they come (as evidenced by our well-round list here), most recipes start with avocado, cilantro and lime juice. Jalapeños and chopped onion are also a given, as is a dash of salt. From there the ingredient mix-ins are really endless. You can add tomatoes, corn, beans, cheese, garlic, radish and anything else your heart desires!
How do you keep guacamole from turning brown?
There’s nothing more disappointing than making a huge batch of guacamole for a Cinco de Mayo or Taco Tuesday party and having it turn brown a few hours in. To keep this from happening, try this trick when you’re ready to store leftover guac: pat the dip down in a flat, even layer, and then squeeze lemon or lime juice over the top. Cover with plastic wrap (directly touching the guac) and it will be nice and green when you go to eat it again!
